Roasting today Small-batch roastery & café · Foundry District · est. 2014

Loud beans. Honest roasts.

We roast twice a week on a rebuilt 12-kilo drum called Bertha, ship within 48 hours, and print the farm, the roast date and the price we paid on every single bag. No mystery blends. No sad shelf beans.

01 The bean wall

Single origins, roasted loud.

Six coffees on the wall this week. Every 250g bag is roasted to order and labelled with the farm, the process and what we paid per kilo. Pick one. Pick three. We won't judge.

03 How we roast

Five steps. Zero shortcuts.

There's no secret. There's just a lot of tasting, a rattly old machine, and refusing to sell anything we wouldn't drink ourselves.

Roast curve chart: bean temperature drops from a 200 degree charge to a turning point at 1:10, reaches yellowing at 4:30, first crack at 8:15 and is dropped at 10:05 at 208 degrees. TURN 1:10 YELLOW 4:30 1ST CRACK 8:15 DROP 10:05 200° 120° 0:00 10:00
  1. Buy direct, print the price

We buy from nine farms and co-ops we've stood in, on contracts that run three years or more. The price we paid per kilo of green coffee is printed on the front of every bag, not buried in a PDF.

    2025 average: $7.10/kg · 2.4× commodity
  2. Cup before we commit

Every lot is sample-roasted and cupped blind by three of us. If it doesn't make at least two people say "oh" out loud, it doesn't make the wall. Last year we turned down 41 samples.

Pass rate: 1 in 6 samples
  3. Roast small on Bertha

Bertha is a 1998 drum roaster we rebuilt bolt by bolt. Twelve-kilo batches let us chase each coffee's sweet spot: quick and light for florals, longer and slower for chocolate.

~38 batches a week · logged, every one
  4. Rest, taste, repeat

Beans rest 24–48 hours to de-gas, then every batch is cupped against the last one. Anything off-profile becomes "Oops Blend" for our cold brew and is sold at half price, with a note saying why.

Every batch cupped · no exceptions
  5. Out the door in 48h

Roasted Tuesday and Friday, packed by hand into home-compostable bags with the roast date stamped in big, honest numbers. If it's been on our shelf more than a week, it goes to the café, not to you.

04 The café

The menu. Short on purpose.

Everything at the bar is made with beans from the wall, milk from a dairy 30 miles away and pastries baked before sunrise next door.

05 Visit

Three cafés. One very busy roaster.

Follow your nose. On roast days you can smell the Roastery from two streets away. The neighbours have mostly forgiven us.
